U.S. News and World Report highlighted research by Valter Longo of the USC Leonard Davis School on the benefits of fasting-mimicking diets on aging and disease progression. Longo has found in several animal studies that eating normally following a period of fasting can “regenerate organs by turning on stem cells.”
